I've been tying flies only a year and coming across a few obstacles. One major instance is the size of my hackle. It always seems I purchase hackle that is way too big. My inexperienced eye makes me purchase what I think will work and I get home to wrap it on a hook and I'm disappointed. So the question is, do I need to just get better at picking the right hackle, or can I get away with trimming the fibers down to the right size after tying it in if I need to?

I'm assuming you have a hackle gauge, yes? If you buy capes, you'll get a wide range of hackle sizes that will cover what you need. If you're buying saddles or stuff like Whiting 100s, take the gauge with you and check the feathers out before you buy; I've had more than one pack of those Whitings turn out to be mis-sized.
Except for notching the bottom on some flies like thorax duns, I haven't had much luck trimming hackle.
